Knead the dough again for a couple of minutes after resting.

Flatten the dough with palms and roll it out using a rolling pin.
Dust flour on the dough to prevent stickiness while rolling.
Roll the dough into a thin sheet, aiming for 1 to 2 millimeters in thickness.
Fold the rolled dough and dust with flour between layers.
Cut the folded dough into noodles using a sharp knife.
Separate the noodles and toss them to prevent sticking.
Boil a large pot of salted water and add the noodles, cooking for 3 to 5 minutes.
Drain the noodles and rinse with hot water to remove excess starch.
Prepare a quick sauce with homemade oils and soy sauce, and toss with the noodles.
Top with fried shallots, diced scallions, and chili oil.
