Start by proofing the yeast: combine 2 teaspoons of yeast, 1 teaspoon of sugar, and 3/4 cup of warm water (between 105 and 115 degrees) in a bowl.
Mix the yeast mixture with a whisk and let it sit for 5-10 minutes until it bubbles and rises.
In a mixing bowl, combine the proofed yeast with 2 1/4 cups of flour, 1 teaspoon of salt, and 2 tablespoons of olive oil.
Use a dough hook to mix until a solid ball forms and cleans the bowl of loose flour.
Add garlic powder, crushed red pepper, and Italian seasoning to the dough for flavor.
Once mixed, divide the dough into four balls and place them in a sprayed Pyrex dish, flipping them to coat both sides with spray.
Let the dough balls rise for a couple of hours until doubled in volume.
On a lightly floured surface, roll out each dough ball into a pizza shape, using a rolling pin or hands.
Transfer the rolled-out dough to a lightly floured cutting board.
Preheat the grill to medium heat and place the crusts on the grill grates to cook one side for 60-90 seconds until golden-brown and puffed up.
Flip the crusts to check for color and remove them from the grill once they have a little color.
Build the pizzas: one person uses olive oil and BBQ sauce on top, while the other uses BBQ sauce as the base and adds toppings on top.
Add toppings: leftover smoked brisket, sautéed red onion, feta cheese, fresh mozzarella, crispy fried onions, and BBQ sauce.
Return the built pizzas to the grill, adjusting the heat to medium to avoid scorching the bottoms while allowing the cheese to melt.
