Use half of a red cabbage and half of a green cabbage, grated coarsely, and mix them together in a bowl.
Grate one large carrot and add it to the cabbage mixture, mixing well to combine.
Slice one red onion finely, adding it to the mixture and mixing again for a crunchy texture.
Add about 1 teaspoon of salt and black pepper to season, mixing well.
Grate lemon and lime zest into the mixture, then add a squeeze of lime juice, mixing to incorporate the flavors.
Prepare mayonnaise using 1 whole egg, mustard, lemon juice, and sunflower oil, adding it to the slaw mixture.
Mix the mayonnaise into the slaw until creamy and well combined.
Add 1 teaspoon of paprika and 1 teaspoon of cumin to the slaw, mixing thoroughly.
Add a couple of handfuls of pumpkin seeds for extra crunch, mixing gently.
Cover the slaw and store it in a cool place, stirring occasionally before serving.
Serve in a glass dish for an attractive presentation.
