Vegetable oil is a more affordable option for grilling.
Take 300 grams of grated vegan cheese and 180 grams of vegan cream cheese, then add 4 tablespoons of vegan mayonnaise, 2 tablespoons of nutritional yeast, 2 tablespoons of lime juice, 1 teaspoon of salt (add towards the end as per taste), 0.5 teaspoon of garlic powder, and 1 teaspoon of black pepper powder.
Wash the spinach thoroughly and finely chop it, using around 160 grams.
Mix everything until well combined, ensuring the spinach is dry to avoid a watery mixture. If it does turn watery, refrigerate it for some time.
Apply vegan butter on one side of all the bread slices evenly, avoiding large gaps.
Heat a pan at medium heat and apply some butter or oil to the pan, spreading it across the entire pan.
Place the bread slices with the butter side on the pan, using two slices simultaneously.
Add around 1 tablespoon of the spinach dip to each bread slice and spread it nicely, keeping it to a thin layer.
Take another bread slice and place it on top of the dip with the butter side up.
Cover the pan and let it cook for 1 minute, reducing the heat if necessary.
After a minute, remove the cover and carefully flip the bread, checking for a golden brown color.
Cover it again for another minute, then remove the cover and cook until achieving a nice golden brown layer.
Serve hot, ensuring the sandwich is perfectly grilled on the outside and creamy on the inside.
