Greek yogurt reduces calories while maintaining creaminess
Cut up 1 small onion and 1 bell pepper.
Put diced onion and bell pepper into a 12-inch skillet with 1.5 pounds of ground beef.
Set the skillet to a little higher than medium heat (number 6) and brown the ground beef.
Spray a 9x13 baking dish with Pam cooking spray.
Roll out 1 can of crescent rolls into the bottom of the baking dish.
Add garlic powder, onion powder, pepper, and salt to the ground beef mixture to taste and mix well.
Drain grease from the ground beef mixture.
Add 1/3 cup water, 3 tablespoons taco seasoning, juice from 1 can of Rotel, and juice from 1 can of green chilies to the skillet and stir.
Let the mixture come to a boil, then reduce to a simmer for 10 minutes.
In a separate bowl, heat 6 ounces of cream cheese until workable.
Add 2 tablespoons of ranch powder seasoning to the cream cheese and mix.
Grate 1 cup of pepper jack cheese and add it to the cream cheese mixture.
Add 1/2 cup of sour cream to the mixture and sprinkle in salt and pepper to taste.
Add the green chilies (that were drained earlier) to the mixture and mix everything together.
Pour the ground beef mixture over the crescent roll base in the baking dish.
Sprinkle the Rotel over the ground beef mixture.
Dump the cream cheese mixture on top of the ground beef and spread it out.
Cover the entire dish with Colby jack cheese.
Add jarred jalapeno slices sporadically on top of the dish.
Bake in the oven at 350 degrees Fahrenheit for 40 minutes.
Increase the oven temperature to 375 degrees Fahrenheit and bake for an additional 10 minutes.
After 40 minutes at 350, check the dish and if it's looking done, pull it out after 8 minutes at 375.
Let the casserole cool for a few moments before cutting into it.
