Heat 2-4 tablespoons of oil in a pan until hot.
Add 1 small diced onion to the pan and stir until tender.
Add 2 cups of chopped walnuts to the pan with the onions.
Pour in 1 packet of taco seasoning and stir.
Add 1.5 cups of water to the mixture and stir well.
Add 1 tablespoon of chopped chipotle chilies in adobo sauce for heat.
Let the mixture simmer until thickened, absorbing flavors.
Taste and add salt and pepper as needed.
For walnut feta sliders, grind 1 cup of untoasted walnuts in a food processor until they are small pieces.
Add 1 cup of cooked brown rice to the food processor and pulse until combined.
Add 3/4 cup of refried beans, 1/4 cup of breadcrumbs, and 10 chopped Kalamata olives to the mixture.
Add 2 teaspoons of fresh dill, 2 teaspoons of minced onion, 1/2 teaspoon of garlic powder, and 1 teaspoon of pepper to the food processor.
Add 2 tablespoons of oil and 1/2 cup of feta to the mixture and fold to combine.
Portion out the mixture into patties using a 2-ounce scoop, making roughly 10 sliders.
Heat a nonstick pan to medium and add a little oil.
Cook the patties for about 5 minutes on each side until golden brown.
