South Of The Border Grouper Recipe

Chop green bell pepper, yellow bell pepper, cubanelle pepper, jalapeno pepper, red tomatoes, fresh parsley, and Vidalia onions.

Combine chopped peppers, tomatoes, parsley, onions, a little hot sauce, and V8 juice in a bowl to make salsa.

Saute the vegetable mixture for 2-3 minutes.

Drizzle olive oil on the grouper fillets.

Season one side of the grouper with the special south of the border seasoning.

Heat a superhot grill and place the seasoned side of the grouper down on the grill.

Leave the grouper alone to sear without touching it.

Flip the grouper only once when the edges start to turn slightly.

Check for doneness when juices start to come out of the fish, indicating it's ready to come off the grill.
