Bring the mixture to a boil.
Reduce the heat and let it simmer for about 10 minutes, noting that it will remain a watery sauce.
For the mustard-based sauce, start with 1 1/2 cups of prepared yellow mustard in a bowl.
Add 1/2 cup of apple cider vinegar.
Pour in 1/2 cup of honey.
Add 1 tablespoon of brown sugar and 1 tablespoon of ketchup.
Stir in 1 teaspoon of black pepper, 1 teaspoon of white pepper, 1/2 teaspoon of kosher salt, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of cayenne pepper.
Whisk until everything is well combined.
Transfer the sauce to a jar and let it set up in the fridge overnight.
Warm it before serving.
For the sweet barbecue sauce, start with 1 cup of water in a saucepan.
Add 1 cup of ketchup and 1/2 cup of loosely packed brown sugar.
Pour in 1/3 cup of apple cider vinegar.
Add 1 1/2 tablespoons of molasses, 1 tablespoon of onion powder, 1 tablespoon of chili powder, 1 tablespoon of fresh cracked pepper, 1/2 teaspoon of garlic powder, 2 teaspoons of kosher salt, and 1 teaspoon of celery salt.
Mix everything together and bring to a slow boil.
Reduce the heat and simmer for about 10 minutes until it thickens slightly.
For the Eastern Carolina barbecue sauce, start with 3/4 cup of apple cider vinegar in a bowl.
Add 1/2 cup of ketchup, 1 tablespoon of lemon juice, 1 teaspoon of cayenne pepper, 1 1/2 teaspoons of brown sugar, 1 teaspoon of kosher salt, and 1/2 teaspoon of fresh cracked pepper.
Combine all ingredients thoroughly without heating.
For the mayonnaise-based white sauce, start with 1/2 cup of mayonnaise in a bowl.
Add 2 tablespoons of water and 2 tablespoons of apple cider vinegar.
Stir in 1 tablespoon of light brown sugar and 1 tablespoon of lemon juice.
Add 1 teaspoon of black pepper, 1/2 teaspoon of sea salt, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of cayenne pepper.
Mix until completely combined and chill for about an hour before serving.
