Peel and core the Granny Smith and Honey Crisp apples, slicing them to about a quarter of an inch thick.
Place the sliced apples into a bowl.
Melt 4 tablespoons (1/4 cup) of butter in a skillet over medium heat.
Add the apples to the skillet and stir constantly for about 5 to 6 minutes until they start to get tender.
Note that it took about 8 minutes for the apples to start to get tender due to their firmness.
In a separate bowl, mix together 2 teaspoons of cornstarch and 1/2 cup of water until the cornstarch is dissolved.
Pour the cornstarch mixture into the skillet with the apples.
Add 1/2 cup of brown sugar and 1/2 teaspoon of cinnamon to the skillet and mix well.
Let the mixture simmer for a couple of minutes until it thickens into a syrup.
