Preheat the oven to 375°F (190°C).
In a large bowl, combine 2.5 cups of whole wheat flour, baking powder, baking soda, sugar, paprika, powdered garlic, dried parsley, salt, and nutritional yeast.
In a separate bowl, mix 1 cup of almond milk with apple cider vinegar to create a buttermilk substitute.
Add 4 tablespoons of cold vegan butter, grated into the flour mixture, and mix gently until combined.
Pour in the wet mixture and mix until just combined, being careful not to overwork the dough.
Turn the dough onto a floured surface and press it out to about 1 inch thick.
Transfer the dough to a silicone mat or parchment paper-lined baking sheet.
Bake in the preheated oven for approximately 20 minutes.
After 20 minutes, check the scones; if not ready, brush with olive oil and return to the oven for an additional 2-3 minutes.
Remove the scones from the oven and let cool slightly before serving.
