Onion Rice

2 tsp oil
1/2 tsp rai (mustard seed)
3/4 tsp cumin (jeera)
1.5 tsp garlic, finely chopped
1 tsp ginger, finely chopped
2 big onions, sliced
2 green chillies, chopped
1/4 tsp turmeric
3/4 tsp chilli powder
1/4 tsp black pepper powder
2 tbsp curd
1/4 tsp sugar
2.5 cups cooked basmati rice
1/4 tsp salt
1/2 tsp salt (as per taste)
2-3 tbsp coriander leaves, chopped

Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.

Add finely chopped garlic and ginger, sauté until fragrant.

Add sliced onions and chopped green chillies, cook until onions are translucent.

Stir in turmeric, chilli powder, black pepper powder, and sugar, mix well.

Add the cooked basmati rice and salt, stir to combine everything evenly.

Add curd and mix gently until well incorporated.

Garnish with chopped coriander leaves and a squeeze of lime before serving.
