Heat a large fry pan over medium heat and add 1/4 cup of extra virgin olive oil.

Thinly slice 2 medium-sized yellow onions and roughly chop 4 cloves of garlic.

Add the sliced onions to the hot fry pan, mixing them around to coat in the olive oil, stirring every 1 to 2 minutes for about 10 minutes until translucent.

Add the chopped garlic, 1 teaspoon of dried oregano, 1/4 teaspoon of crushed red pepper, sea salt, and freshly cracked black pepper, mixing continuously for about 1 minute until the garlic is fragrant.

Drain and rinse 1 can of white beans (14 1/2 oz or 400 g) and add them to the pan.

Pour in 1 liter of vegetable broth (4 1/4 cups) and turn the heat to high, giving it a gentle mix.

Measure out 1 cup of rice (190 grams) and prepare it according to package instructions, adding a little extra liquid for creaminess.

Once the broth comes to a boil, add the rice to the pan and mix well, then lower to low medium heat and simmer for about 18 minutes, stirring every 2 to 3 minutes.

After 18 minutes, turn off the heat and add 1/4 cup of grated cheese (30 g) and 2 teaspoons of fresh lemon juice (10 ml), mixing until well combined.
