0.5 teaspoons instant yeast (about 2 grams)
500 grams Caputo Fiore gluten free flour
2.5 teaspoons salt (about 12.5 grams)
1 tablespoon extra virgin olive oil (about 10 grams)

Start with 400 milliliters of lukewarm water.

Add 0.5 teaspoons of instant yeast to the water.

In a bowl, combine 500 grams of Caputo Fiore gluten free flour with the water and yeast mixture.

Mix the flour and liquid together until all the flour is absorbed.

Add 2.5 teaspoons of salt to the dough and work it in.

Add 1 tablespoon of extra virgin olive oil to the dough and mix until combined.

Divide the dough into three equal portions of about 300 grams each.

Roll each portion into a ball and place them in a container with a lid, coating with olive oil to keep moist.

Let the dough sit for about an hour to rise.
