Add 250 ml of water and 7 g of yeast into a jar.

Mix well and let it sit for a moment.

Add half of the gluten-free flour and mix well.

Add 5 g of sugar, 12 g of salt, and 1 tablespoon of extra virgin olive oil.

Continue adding flour gradually until fully incorporated into the dough.

Cover the dough and let it rest for 10 minutes.

Prepare the tomato sauce by mixing 300 g of tomato pulp, a pinch of oregano, 1 teaspoon of salt, chopped garlic, and 1 tablespoon of extra virgin olive oil.

Divide the dough into two halves, shaping one into a bowl and placing the other in a baking pot with some oil.

Cover both with plastic wrap and let them rise for 3 hours.

After 3 hours, shape the dough gently and sprinkle with oregano.
