1 whole chicken
1 yellow onion
2 large ginger
5 tablespoons salt
4 tablespoons fennel
1 tablespoon star anise
5 tablespoons coriander
8 liters high quality water
green onions
cilantro

Bring water to a boil.

Add the whole chicken, charred onions, and ginger to the boiling water and let it boil for 1 hour.

After 1 hour, remove the chicken and cold plunge it for 30 minutes.

Dismember the chicken, saving the dark meat, white meat, and wings for later, and add the bones, skin, head, and feet back into the pot for the last 2 hours.

Prepare the dry aromatics and low roast until fragrant, then add into your spice ball and let it simmer for one more hour.

Turn off the heat and season the broth with more salt to taste.
