Chicken Tomato Bean Bake

4 chicken thighs, bone-in and skin-on
1 can (15 oz) diced tomatoes
1 can (15 oz) cannellini beans, drained and rinsed
1 medium onion, chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1/2 cup grated Parmesan cheese (optional)

Preheat the oven to 375°F (190°C).

In a large oven-safe skillet, heat the olive oil over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Season the chicken thighs with salt, pepper, oregano, and basil. Place them skin-side down in the skillet and sear for about 5-7 minutes until golden brown.

Flip the chicken thighs over and add the diced tomatoes and cannellini beans to the skillet, stirring to combine.

Bring the mixture to a simmer, then remove from heat.

If using, sprinkle the grated Parmesan cheese over the top of the chicken and beans.

Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Remove from the oven and let it rest for a few minutes before serving.
