Preheat oven to 200°C (392°F).
Weigh and measure 200 g of quinoa and 200 g of gluten-free oats.
Blend the oats and quinoa together until they form a flour-like consistency.
In a bowl, combine 1 teaspoon baking powder, 1 teaspoon onion granules, 1 teaspoon garlic granules, 1 teaspoon smoked paprika, 1 teaspoon mild chili powder, a little touch of cayenne pepper, and a pinch of salt.
Mix the dry ingredients together.
Add 2 tablespoons of coconut sugar to the dry ingredients and mix until well combined.
Make a well in the center of the mixture and add 2 scrambled large eggs and 200 ml of oat milk.
Mix until the ingredients form a batter-like consistency.
Pre-line a loaf tin with greased parchment paper and brush the sides with oil.
Transfer the batter into the loaf tin, spreading it evenly.
Bake in the preheated oven for 25 to 30 minutes or until golden brown.
Check doneness by inserting a skewer; it should come out cleanish.
Let the loaf cool before slicing.
