🥗Healthier: chicken breast

💰Cheaper: pork loin

Chicken breast is leaner, while pork loin can be more affordable.

1

Place 4 flank steaks in a mixing bowl.

2

Season the steaks with 1 tablespoon garlic powder, 1 clove garlic (minced), 1/2 tablespoon cumin, 2 bay leaves, 1/2 tablespoon apple cider vinegar, and the juice of 1 lime. Mix well and let sit for 10 minutes.

3

Chop 1 onion thickly for topping the steak.

4

Cook 2 cups jasmine rice with 2 cups water, 1 tablespoon olive oil, and 1/2 tablespoon salt in a pot.

5

In a separate pan, melt butter and add 4 cloves of garlic, then add 2 tablespoons sofrito Goya and 1/2 cup red sweet pepper. Mix well.

6

Add 2 cans of black beans (with juice) to the pan and season with 1/2 teaspoon apple cider vinegar and fresh ground pepper. Cover and cook for 10-15 minutes.

7

Heat olive oil in a skillet over medium-high heat and cook the marinated steaks for about 1 minute on each side until browned.

8

Remove the steaks and add the chopped onions to the skillet, cooking until golden brown, about 2 minutes.

9

Return the steaks to the skillet with the onions, cover, and cook for another minute. Add fresh parsley before serving.
