Peel and slice 1 kilogram of potatoes into fries.
Soak the potato fries in cold water for around 30 minutes to enhance crunch and remove excess starch.
Place a pot with water on the stove and bring it to a boil.
Add 1 teaspoon of salt to the boiling water.
Add the soaked potato fries to the boiling water and boil for 2 to 3 minutes, checking for doneness.
Drain the potatoes using a skimmer and let them cool for around 22 minutes to allow excess moisture to escape.
Preheat the cooking oil in a pot until ready for frying, checking for small bubbling to indicate readiness.
Fry the potatoes in batches, avoiding overcrowding the pot to maintain oil temperature.
After around 1 minute, use a skimmer to toss the potatoes to prevent sticking.
Fry until the fries are crispy and golden brown, about 4 minutes total.
Remove the fries with a skimmer, shaking off excess oil, and transfer to a plate lined with kitchen paper towels.
Immediately season the hot fries with a little salt, tossing to ensure even coverage.
