Start by blending 1 cup of cottage cheese in a chopper cup with an immersion blender until smooth.
Crack in 1 egg and blend just until combined, then set aside.
In a mixing bowl, add 1 and 1/4 cups of oat flour and 1/2 cup of almond flour.
Add 1/4 cup of parmesan cheese, 1 and 1/2 teaspoons of baking powder, and 1/2 teaspoon of salt to the dry ingredients and mix well.
Add the blended cottage cheese and egg mixture to the dry ingredients and mix with a spatula until combined.
Ensure the dough is sticky enough to barely stick to your fingers; adjust with more cottage cheese or flour as needed.
Line a cookie sheet with parchment paper and pour olive oil into your hands to handle the sticky dough.
Scoop out the dough, roll it into a log shape, and set it on the prepared pan, elongating it to about 9 or 10 inches long.
Brush the top and sides of the loaf with egg white using a pastry brush.
Optionally sprinkle sesame seeds or everything bagel seasoning on top.
Bake in a preheated oven at 350°F for 28 to 32 minutes until golden brown.
Allow the bread to cool completely for several hours before slicing.
In a mixing bowl, combine 1/3 cup of butter, 4 cloves of minced garlic, 2 teaspoons of Italian seasoning, and a couple pinches of salt; mix until well combined.
Add about 6 oz of mozzarella cheese on top of the bread and transfer to a baking sheet lined with parchment paper.
Bake in a 425°F oven for 10 to 12 minutes until the cheese is bubbly and lightly toasted.
Set to broil for about 1 and a half minutes for extra toasting on top.
Sprinkle diced parsley on top before serving.
