Combine two ¼-ounce envelopes active dry yeast and 1/2 cup warm water (100 degrees to 110 degrees) in a glass measuring cup. Let stand 5 minutes.

In a large bowl, stir 1 teaspoon salt into 4 cups all-purpose flour.

Stir 2 beaten eggs into sour cream mixture. Gradually add flour mixture, stirring well.

Cover with plastic wrap and refrigerate 8 hours or overnight.

Cover with plastic wrap and let rise in a warm place (85-degrees), free from drafts, 45 minutes or until almost doubled in bulk.

Bake at 375 degrees (F) for 8 to 12 minutes until golden brown, checking often.

Remove from oven and immediately use a spatula to transfer each roll to a nice serving plate.
