Roast the lengthy peppers and red bell peppers in the oven with a grill function until crispy brown and bubbly.
Place the roasted peppers in a bowl and cover with foil to sweat for 5 to 10 minutes.
Peel the skin off the roasted peppers and remove seeds as desired.
Let the roasted peppers and eggplant cool completely.
Chop the tomatoes, parsley root, and garlic.
Add the roasted peppers and eggplant to a blender.
Season with salt and pepper to taste, and add chopped parsley root and tomatoes.
Add chili pepper and garlic to the blender.
Add a pinch of sugar to balance the acids, then blend until smooth.
Adjust seasoning with more salt and vinegar to taste, then add olive oil and blend again.
Transfer the ajvar to a glass jar and store in the fridge.
