1 lb chicken breast, sliced into thin strips
2 cups mixed vegetables (bell peppers, broccoli, carrots)
3 tbsp soy sauce
2 tbsp vegetable oil
1 tbsp cornstarch
1/2 cup chicken broth
2 cloves garlic, minced
1 tsp ginger, minced
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)

In a bowl, combine the sliced chicken with cornstarch, black pepper, and a tablespoon of soy sauce. Mix well and let it marinate for about 15 minutes.

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the marinated chicken to the skillet and stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned.

Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

Add the mixed vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.

Return the cooked chicken to the skillet with the vegetables.

Pour in the chicken broth and the remaining soy sauce, and stir everything together. Cook for an additional 2-3 minutes until heated through.

If desired, sprinkle red pepper flakes for added spice and mix well.

Serve hot over rice or noodles.
