Butter one side of each slice of bread
Place mozzarella cheese and koda cheese on the unbuttered side of one slice
Add sliced tomatoes, thinly sliced onions, and garlic on top of the cheese
Sprinkle salt, pepper, dried oregano, and dried thyme over the vegetables
Spread peach chutney on the unbuttered side of another slice of bread
Top the sandwich with the second slice, chutney side down
Butter the outside of both slices of bread
Heat a grill over medium heat
Place the sandwich on the grill, buttered side down
Grill until golden brown, about 3-4 minutes
Flip the sandwich carefully
Grill the other side until golden brown, about 3-4 minutes
Remove from heat and let cool slightly
Cut into quarters and serve warm
