Rocoto sauce is a popular condiment in Peruvian cuisine, known for its smoky flavor and heat.

Ingredients

  • 4 fresh rocoto peppers
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp sugar
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. 1Roast the rocoto peppers over an open flame or under a broiler until the skin is charred and blistered.
  2. 2Place the roasted peppers in a bowl and cover with plastic wrap to steam for about 10 minutes.
  3. 3Once cooled, peel off the charred skin, remove the seeds, and chop the peppers.
  4. 4In a blender, combine the chopped rocoto peppers, olive oil, red wine vinegar, minced garlic, salt, black pepper, cumin, and sugar.
  5. 5Blend until smooth and well combined, adjusting seasoning to taste.
  6. 6Stir in the chopped cilantro for added freshness.
  7. 7Transfer the sauce to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. 8Serve as a condiment with grilled meats, seafood, or as a dip for vegetables.
