Fiesta Chicken

3 frozen skinless boneless chicken breasts (about 2 and 1/4 pounds)
1/4 cup fresh lime juice
1 cup salsa
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon salt
1/2 cup chopped cilantro
black beans
diced onions
cheese
diced tomatoes
sour cream
guacamole

Add 3 frozen skinless boneless chicken breasts (about 2 and 1/4 pounds) into the Instant Pot.

Pour in 1/4 cup of fresh lime juice.

Add 1 cup of salsa.

Sprinkle in 2 teaspoons of cumin, 1 teaspoon of chili powder, 1 teaspoon of garlic powder, and 1 teaspoon of salt.

Stir everything around to coat the chicken.

Place the lid on the Instant Pot and turn it to sealing.

Set the timer for 27 minutes on high and hit start.

Once the timer finishes, let it rest for 15 minutes for natural release.

Turn off the Instant Pot and release any excess steam.

Remove the chicken from the pot and place it on a cutting board.

Use a couple of forks to shred the chicken.

Add the shredded chicken back into the pot with the juices, salsa, and spices.

Stir to soak up all the flavor.

Add about 1/2 cup of chopped cilantro and stir it together.

Serve the chicken in tacos, burritos, or a rice bowl with toppings like black beans, diced onions, cheese, diced tomatoes, sour cream, and guacamole.
