Fiesta Chicken Bowls, easy instapot meal

Cut chicken breast into bite-sized pieces.

Add 1 packet of taco seasoning to the chicken and mix well to coat.

Add about 0.5 cups of water to the mixture.

Dump in 1 can of corn (do not drain).

Add frozen chopped peppers to the pot.

Dump in 1 can of petite diced tomatoes (do not drain).

Rinse and drain 1 can of black beans, then add them to the pot.

Do not stir the mixture; place the lid on the Instant Pot and seal it.

Set the Instant Pot to cook on manual for 12 minutes (20 minutes if using frozen chicken).

While waiting, chop cherry tomatoes, lettuce, and avocados for garnishing.

After cooking, switch from seal to venting to release steam and wait for the Instant Pot to depressurize.

Once depressurized, remove the lid and stir the contents to combine.

Check the doneness of the chicken; it should be tender from braising in the liquid.

Serve the mixture over cilantro lime rice and add toppings like avocado, sour cream, cheese, or tortilla chips.
