Separate the root of 1 celery from the leaves.
Peel the celery root.
Chop the celery root.
Add the chopped celery roots to a large bowl.
Add enough water to cover the chopped celery.
Add the juice of half a lemon to the water.
Rest the chopped celery roots in water with lemon to prevent browning.
Wash the celery leaves well with vinegar and water.
Chop the celery leaves.
Chop 1 onion.
Chop 2 carrots.
Add 100 ML of olive oil to a pot.
Add the carrots and onions to the pot and saute them for a few minutes over medium heat.
Add the chopped celery roots to the pot.
Chop and add 1 potato to the pot.
Saute the mixture for a few minutes over medium heat.
Add 10 grams of wheat flour and stir for a few minutes over medium heat.
Add the chopped celery leaves to the pot.
Add 120 grams of boiled chickpeas to the pot.
Add enough hot water to cover the vegetables and mix well.
Leave the vegetables to boil over high heat.
When the water boils, turn down the stove fire and cover the pot.
Add 1 egg yolk and the juice of 1 lemon to a mixing bowl and whisk well.
Add 1 ladle of the meal's water to the mixing bowl while whisking to prepare the soup dressing.
If the vegetables are cooked, add the soup dressing to the meal while stirring gently to avoid crushing the vegetables.
Add black pepper and salt to taste.
The meal will be ready after another 5 minutes of cooking.
Cover the pot and rest the meal for 10 minutes.
