Slice around the sides of the orange to remove the white pith.

Carefully slice along the segment lines to free the orange sections, discarding any seeds.

Save the excess juice from the orange.

Cut the carrots into smaller pieces for salad.

Add the chopped carrots to the bowl with the orange segments.

Tear up some fresh spinach and add it to the bowl.

Add fresh parsley to the mixture.

Add a bit of pesto to the salad.

Season with salt and black pepper.
