Skinless chicken is lower in fat; chicken thighs are often cheaper than breasts.

Saute veggies in canola oil for about 5 minutes.

Add 2 quarts of water and chicken leg quarters to the pot.

Season with salt and pepper, and bring to a boil.

Cook chicken until done, about 45 minutes, then remove and let cool.

Debone the chicken and taste the broth, adding bouillon cubes if needed.

Add dumplings to the boiling broth and simmer for about 40-45 minutes until done.

Add a tablespoon of flour to thicken the broth and stir well.

Return deboned chicken to the pot and mix in.
