Slice 8 onions thinly.
Slice 1 green bell pepper and 1 red bell pepper the same way.
Heat a skillet over medium-high heat and add a little oil.
Add the sliced onions to the skillet and cook for about 5-6 minutes until they are limp but not caramelized.
Season the onions with salt to taste while they cook.
Add the sliced green and red bell peppers to the skillet after the onions have cooked for about 5-6 minutes.
Add 1/8 teaspoon of crushed red pepper to the skillet.
Stir in 3 tablespoons of brown sugar and mix well.
Pour in 1/2 cup of white vinegar and stir.
Add 3 tablespoons of tomato perry to the mixture and stir to combine.
Reduce the heat to low and allow the mixture to simmer for about 3 minutes.
Remove the lid and check the dish to see the final result.
