2 tablespoons tomato paste
1 teaspoon cayenne pepper
2 tablespoons Harissa
1 tablespoon lemon zest
4 cloves minced garlic
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cardamom
1 teaspoon cinnamon

Prepare the slow cooker for the tagine.

Add diced potato, sweet potato, red bell pepper, carrots, and eggplant to the slow cooker.

Add diced apricots and drained chickpeas to the slow cooker and mix everything together.

Add water and two boiling cubes to the mixture in the slow cooker.

Add about two tablespoons of tomato paste to the mixture.

Prepare a spice blend: add 1.5 teaspoons of ground coriander, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of cardamom, and 0.5 teaspoons of cinnamon to the slow cooker.

Add half a teaspoon of Harissa to the mixture for spice.

Add approximately 1 to 1.5 cups of water to the slow cooker and mix well.

Cover the slow cooker and set it to cook for 7 to 9 hours on high.

Remove the piece of lemon zest from the tagine before serving.
