Vegan Coffee and Walnut Cake

Grease two cake tins with vegan margarine.

Measure out the vegan margarine and sugar, then mix them together in a mixer.

In a separate bowl, mix together self-raising flour and bicarbonate of soda.

Add vanilla essence and a tiny bit of salt to the butter and sugar mixture.

While mixing, gradually add oat milk that has a tiny bit of apple cider vinegar added into it.

Follow the advice to add the milk and dry mix bit by bit to avoid splitting the batter.

Once the mixture reaches the right consistency, split it between the two baking tins.

Spread the mixture evenly in the tins and bake in the oven for 20 minutes.

Check for a nice golden brown color; the edges may be slightly hard but the cake should be moist.

Make the butter icing by mixing vegan butter with coffee.

Cover the cooled cakes with the coffee butter icing.

Add walnuts on top of the iced cake.
