Show 6 short ribs and list ingredients including 2 small carrots, 1 small potato, 1 red bell pepper, 1 tomato, 1 onion, 5 cloves garlic, 1 scotch bonnet pepper, 2 tablespoons fresh thyme, 1 stalk scallion, and various seasonings.
Wash short ribs in lemon juice and mention they are tough to cut; recommend cutting into 2-3 pieces if possible.
Add 1 tablespoon olive oil to the short ribs to help the seasoning absorb.
Add 1 tablespoon wet jerk seasoning and mix in garlic, thyme, scotch bonnet pepper, carrots, potato, bell pepper, onion, and tomato.
Add seasonings: 1 teaspoon each of mixed herbs, smoked paprika, black pepper, jerk powder, cajun seasoning, and all-purpose seasoning, reserving some for later. Massage the seasoning into the meat and let it marinate for at least 30 minutes or overnight if time allows.
Heat 1 tablespoon olive oil in a pot over medium heat and add the short ribs to brown for 3 minutes on each side, ensuring they are browned on all sides before removing them from the pot.
Remove excess oil from the pot and any burnt bits, then add remaining garlic and sauté for 10 seconds.
Add 2-3 cups of water to the pot, mix in remaining seasonings, and add salt to taste. Stir and allow to come to a boil before adding the short ribs back in.
Add remaining onion, carrots, tomato, bell peppers, scallion, and thyme to the pot, cover, and cook until tender, checking back after 2 hours and adding more water as needed.
After 2 hours, check the ribs, remove excess fat, and add remaining carrots, potatoes, thyme, scallion, bell peppers, tomato, and 1 tablespoon fresh ginger for flavor.
Add 1 tablespoon ketchup and stir, then cover partially and cook for another 20 minutes.
Mix 1 tablespoon cornstarch with 2 tablespoons cold water until smooth, then add to the pot to thicken the sauce.
