Whole wheat pasta is more nutritious.
Boil water in a pot.
Add salt to boiling water.
Cook elbow macaroni according to package instructions.
In a bowl, combine mayonnaise, Dijon mustard, white vinegar, sugar, and salt.
Mix the dressing ingredients well.
Add black pepper to the dressing.
Add diced bell pepper, diced celery, shredded carrots, and diced yellow onion to the dressing and mix well.
Refrigerate the dressing mixture until the pasta is ready.
Drain and rinse the cooked macaroni, then let it cool completely.
Combine the cooled macaroni with the dressing mixture and mix well.
Refrigerate the macaroni salad for about 4 hours to let the flavors meld.
After 4 hours, take the salad out of the fridge and mix it again.
If the salad is dry, add a couple tablespoons of mayonnaise and mix.
Taste and adjust seasoning with salt and freshly ground black pepper as needed.
Serve the macaroni salad on a platter.
