2 sweet potatoes
1 can chickpeas (about 15-16 ounces)
spinach (fresh or frozen) - your desired amount
about 1.5 cups coconut milk

1 to 1.5 teaspoons paprika
1/2 to 3/4 teaspoon turmeric powder
1 to 1.5 teaspoons curry powder
1/2 teaspoon chili powder (optional)
salt

a little bit of water

Peel and chop the sweet potatoes into bite-sized pieces.

In a large pot, heat some oil over medium heat.

Add chopped onion and garlic, sauté until fragrant.

Stir in the sweet potatoes and cook for a few minutes.

Add the chickpeas, coconut milk, and a little bit of water to the pot.

Season with paprika, turmeric, curry powder, chili powder (if using), and salt.

Bring to a simmer and cook until the sweet potatoes are tender.

Stir in the spinach and cook until wilted.

Serve with rice, naan, or your favorite carb.
