Vegan Curry

500g diced Potatoes
250g Spinach
250g frozen Peas
2 finely chopped Onions
2 pressed Garlic Cloves
400g canned diced Tomatoes
2.5 cup Coconut Milk
2 tbsp Tomato Paste
1 tbsp Curry Powder
1 tbsp Vegetable Broth Powder
1 tsp Chili Powder

In a large pot, sauté the chopped onions and pressed garlic until translucent.

Add the diced potatoes and cook for a few minutes.

Stir in the canned diced tomatoes, coconut milk, tomato paste, curry powder, vegetable broth powder, and chili powder.

Bring the mixture to a simmer and cook until the potatoes are tender.

Add the frozen peas and spinach, cooking until the spinach is wilted and everything is heated through.
