Combine 50 g of warm water, 1/2 teaspoon of sugar, and 5 g of instant yeast in a bowl and let it sit for 5 minutes until bubbly.
In a large bowl, combine 300 g of white spelt flour and 1 teaspoon of salt.
Add the bubbly yeast mixture to the flour mixture.
Add 50 g of soy milk and a splash of olive oil to the mixture.
Bring the dough together with your hands, adding more water if needed, one tablespoon at a time, until the dough is moist but not sticky.
Grease a bowl with oil and place the dough inside to rise for 1 hour.
After 1 hour, divide the dough into 6 pieces.
On a surface dusted with rice flour, flatten each piece and roll it out into a round shape using a rolling pin or by hand.
Brush one side of the rolled naan with olive oil and place it in a preheated cast iron pan.
Cook until bubbly, then brush the other side with olive oil and flip to cook until golden brown.
Cover the cooked naan with a cloth to keep it soft while cooking the remaining pieces.
