Combine 50 g of warm water, 1/2 teaspoon of sugar, and 5 g of instant yeast in a bowl and let it sit for 5 minutes until bubbly.

In a large bowl, combine 300 g of white spelt flour and 1 teaspoon of salt.

Add 50 g of soy milk and a splash of olive oil to the mixture.

Bring the dough together with your hands, adding more water if needed, one tablespoon at a time, until the dough is moist but not sticky.
