EASY Summer Dinner Party! Recipes | Flowers | Setting the Table

Ingredients
- ●4 cups watermelon, cubed
- ●1 cucumber, peeled and diced
- ●1 red bell pepper, diced
- ●1/4 cup red onion, finely chopped
- ●2 cups tomato juice
- ●1/4 cup fresh cilantro, chopped
- ●1/4 cup fresh mint, chopped
- ●2 tbsp lime juice
- ●1 tsp salt
- ●1/2 tsp black pepper
- ●1/2 tsp cayenne pepper (optional)
Instructions
- 1In a blender, combine the watermelon, cucumber, red bell pepper, and red onion.
- 2Blend until smooth, then add the tomato juice and blend again until well mixed.
- 3Stir in the chopped cilantro and mint, lime juice, salt, black pepper, and cayenne pepper if using.
- 4Taste and adjust seasoning as needed.
- 5Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- 6Serve in bowls or glasses, garnished with additional cilantro and mint if desired.

- ●2 bell peppers, sliced (red and yellow)
- ●1 medium onion, sliced
- ●3 tbsp olive oil
- ●1 tsp garlic powder
- ●1 tsp Italian seasoning
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●1/4 cup grated Parmesan cheese (optional)
- ●Fresh basil for garnish (optional)
Instructions
- 1Preheat the oven to 425°F (220°C).
- 2On a large sheet pan, combine the gnocchi, sliced sausage, bell peppers, and onion.
- 3Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss everything together until well coated.
- 4Spread the mixture out in an even layer on the sheet pan.
- 5Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender.
- 6If using, sprinkle grated Parmesan cheese over the top and return to the oven for an additional 5 minutes until melted.
- 7Remove from the oven and let cool for a few minutes.
- 8Garnish with fresh basil before serving.
- 9Serve warm and enjoy!

- ●1 tsp vanilla extract
- ●1/4 cup chopped pistachios (for garnish)
Instructions
- 1Slice the peaches in half and remove the pits.
- 2In a mixing bowl, whip the heavy cream until soft peaks form.
- 3Add the powdered sugar, ground cardamom, and vanilla extract to the whipped cream.
- 4Continue to whip until the mixture is smooth and well combined.
- 5Place the peach halves on serving plates, cut side up.
- 6Spoon the cardamom cream generously over the peaches.
- 7Sprinkle chopped pistachios on top for garnish.
- 8Serve immediately or chill for 30 minutes before serving.
