Ingredients

  • 4 cups watermelon, cubed
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 cups tomato juice
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)

Instructions

  1. 1In a blender, combine the watermelon, cucumber, red bell pepper, and red onion.
  2. 2Blend until smooth, then add the tomato juice and blend again until well mixed.
  3. 3Stir in the chopped cilantro and mint, lime juice, salt, black pepper, and cayenne pepper if using.
  4. 4Taste and adjust seasoning as needed.
  5. 5Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  6. 6Serve in bowls or glasses, garnished with additional cilantro and mint if desired.

  • 1 lb gnocchi
  • 1 lb Italian sausage, sliced
  • 2 bell peppers, sliced (red and yellow)
  • 1 medium onion, sliced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. 1Preheat the oven to 425°F (220°C).
  2. 2On a large sheet pan, combine the gnocchi, sliced sausage, bell peppers, and onion.
  3. 3Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and black pepper. Toss everything together until well coated.
  4. 4Spread the mixture out in an even layer on the sheet pan.
  5. 5Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender.
  6. 6If using, sprinkle grated Parmesan cheese over the top and return to the oven for an additional 5 minutes until melted.
  7. 7Remove from the oven and let cool for a few minutes.
  8. 8Garnish with fresh basil before serving.
  9. 9Serve warm and enjoy!

  • 4 ripe peaches
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp ground cardamom
  • 1 tsp vanilla extract
  • 1/4 cup chopped pistachios (for garnish)

Instructions

  1. 1Slice the peaches in half and remove the pits.
  2. 2In a mixing bowl, whip the heavy cream until soft peaks form.
  3. 3Add the powdered sugar, ground cardamom, and vanilla extract to the whipped cream.
  4. 4Continue to whip until the mixture is smooth and well combined.
  5. 5Place the peach halves on serving plates, cut side up.
  6. 6Spoon the cardamom cream generously over the peaches.
  7. 7Sprinkle chopped pistachios on top for garnish.
  8. 8Serve immediately or chill for 30 minutes before serving.
