Originating from the Swabia region of Germany, Maultaschen are often referred to as 'Swabian ravioli.' Traditionally, they were created as a way to use up leftover meat and vegetables during Lent, making them a dish of resourcefulness. Today, they are enjoyed year-round, often served in broth or pan-fried, and have gained popularity beyond Germany, inspiring various fillings and adaptations.

Teig zubereiten: Mehl, Hartweizengrieß, Eier und Salz in einer Schüssel zu einem Teig verkneten. Falls der Teig zu klebrig ist, etwas mehr Mehl hinzufügen, bis er geschmeidig ist. Den Teig ruhen lassen.
Füllung vorbereiten: Blattspinat gründlich waschen und grob hacken. Roher Lachs in kleine Stücke schneiden. Spinat, Lachs, Fetakäse, Zitronensaft, Salz und Pfeffer in einem Mixer zu einer gleichmäßigen Masse verarbeiten, bis eine Brät entsteht.
Maultaschen formen: Den Teig dünn ausrollen und mit einem Glas runde Teiglinge ausstechen. Die Füllung in die Mitte jedes Teiglings geben und den Teig zu einem Halbkreis schließen. Die Ränder mit einer Gabel gut zusammendrücken.
Maultaschen kochen: Die Maultaschen in leicht gesalzenem Wasser etwa 6-7 Minuten bei schwacher Hitze köcheln lassen, bis sie gar sind. Vorsichtig abgießen.
Soße zubereiten: Butter in einem Topf schmelzen lassen und Mehl hinzufügen, um eine Mehlschwitze anzurühren. Milch langsam einrühren und unter ständigem Rühren köcheln lassen, bis die Soße eindickt. Ein Spritzer Zitronensaft, gehackten Dill sowie Salz und Pfeffer hinzufügen und abschmecken.
Servieren: Die gekochten Maultaschen auf Tellern anrichten und mit der Dillsoße übergießen. Nach Belieben mit frischem Dill garnieren und heiß servieren.
