- 6Pour in the vegetable broth and add the bay leaf. Bring to a boil.
- 7Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
- 8After 15 minutes, add the black beans to the pot, gently folding them into the rice.
- 9Cover again and cook for an additional 5-10 minutes, or until the rice is tender and the liquid is absorbed.
- 10Remove from heat, discard the bay leaf, and let it sit covered for 5 minutes before fluffing with a fork.
- 11Garnish with chopped cilantro before serving.
