Peel the potatoes and cut them into pieces.
Soak the cut potatoes in cold water with some salt for about 15 minutes.
Slice half an onion into thin slices.
Drain the potatoes in a strainer to dry them off.
Heat olive oil and 1 tablespoon of unsalted butter in a large skillet until hot.
Add the potatoes to the skillet, making sure they are not stuck together.
Season the potatoes with salt and black pepper.
Cook the potatoes for about 2-3 minutes without covering them.
After 2-3 minutes, cook the potatoes on the outside for another 2 minutes.
Add 2 more tablespoons of unsalted butter and the sliced onions to the skillet.
Season with a little more salt and black pepper, then reduce the heat and cover the skillet.
Let it cook for about 4-5 minutes.
After 4-5 minutes, lower the heat and cover again, cooking for another 2-3 minutes until the potatoes are soft.
