400 ml coffee
150 g sugar
3 tablespoons water
380 g sweetened condensed milk
8 whole eggs
a pinch of salt
0.5 shot of rum (optional)

Prepare 400 ml of strong coffee and let it rest.

In a 22 cm round baking dish, add 150 g of sugar and 3 tablespoons of water to make caramel.

Cook the sugar and water on low heat until caramelized.

Preheat the oven to 180ºC (356ºF).

In a blender, combine the prepared coffee (same amount as the sweetened condensed milk), approximately 380 g of sweetened condensed milk, 8 whole eggs, a pinch of salt, and 0.5 shot of rum (optional). Blend for 2 to 3 minutes.

Pour the blended mixture into the caramel-coated baking dish slowly.

Place the baking dish in the oven and bake in a water bath (Baño de María) for approximately 1 hour.

After 1 hour, check if the quesillo is ready by inserting a knife in the center; it should come out clean.

Let the quesillo cool to room temperature, then cover and refrigerate for at least 4 hours, preferably overnight, before unmolding.

To unmold, gently run a spatula around the edges to loosen it, then invert onto a plate.
