To make the marinade, combine whole grain mustard, olive oil, all-purpose seasoning, garlic, balsamic vinegar, and a pinch of salt in a bowl and mix together.
Take 1 pound of chicken breasts, score them to help the marinade adhere, and add them to the marinade. Let it sit for about 15-20 minutes if possible.
Heat a cast-iron skillet over medium heat and add the chicken breasts, cooking for 5-6 minutes per side depending on thickness.
Once the chicken is fully cooked, add cherry tomatoes and capers to the skillet along with some of the marinade.
Let the tomatoes cook down for a couple of minutes until they soften.
Add pesto to the skillet, using as much as you like.
Top the chicken with mozzarella cheese and cover the skillet to let it melt, about a couple of minutes.
Serve with juices from the skillet, optionally with angel hair pasta or a baguette.
