Preheat the wood-fired oven.

In a cast iron skillet, add halved roma tomatoes, quartered onion, sliced and seeded jalapeños, and whole cloves of garlic.

Drizzle a little olive oil on the bottom of the skillet and spritz some oil on top of the vegetables.

Place the skillet in the wood-fired oven, positioning it a couple of inches from the fire.

Roast the vegetables for about 8 to 10 minutes, stirring occasionally to ensure even charring.

Once charred, remove the vegetables from the oven and place them in a blender.

Add a little sea salt and some cilantro to the blender with the roasted vegetables.
