Cut the cabbage into eight wedges, leaving the core intact.
Cut the cabbage in half, then cut those halves in half, and then cut those in half to get eight pieces.
Rehydrate 1/4 cup of sun-dried tomatoes in oil and set aside.
Preheat the oven to 400°F.
Season both sides of the cabbage wedges with salt and pepper.
Add about 2 tablespoons of olive oil to an oven-safe skillet and heat it up.
Add the cabbage wedges to the skillet and sear for about 2-3 minutes on each side until caramelized.
Transfer the seared cabbage to a plate and set aside.
Drain the oil from the rehydrated sun-dried tomatoes and chop them up.
Chop one small sweet onion and add it to the skillet, cooking for about 3-4 minutes until softened.
Add 4 cloves of minced garlic to the skillet and cook for 30 seconds to a minute until fragrant.
Pour in 1 cup of chicken broth and scrape up any browned bits from the bottom of the pan.
Add 4 oz of cream cheese to the skillet and stir until melted and smooth.
Stir in the chopped sun-dried tomatoes and mix well.
Add 1 cup of heavy whipping cream to the mixture and stir to combine.
Add 1 teaspoon of dried oregano, 1 teaspoon of dried thyme, 1 teaspoon of salt, 1 teaspoon of crushed red pepper flakes (optional), 1/2 teaspoon of rosemary, and 1/2 teaspoon of black pepper. Stir well and let simmer for 3-4 minutes until slightly thickened.
Nestle the cabbage back into the skillet and spoon the sauce over it.
Sprinkle 1/2 cup of grated parmesan cheese on top of the cabbage.
Place the skillet in the oven uncovered for 20-25 minutes or until the cabbage is tender and bubbly.
Once out of the oven, sprinkle with fresh parsley if available, or use dried parsley as a garnish.
