2 cloves garlic (for garlic paste)

Drain a can of white beans, a can of kidney beans, and a can of pinto beans into a colander and rinse under water.

Finely chop one small onion, roughly chop four cloves of garlic, thinly slice one celery stick, and cut two peeled carrots into small bite-sized pieces.

Heat a stock pot over medium heat and add 3 tbsp of extra virgin olive oil (45 ml).

After a couple of minutes, add the chopped vegetables and sauté for 3 to 4 minutes until lightly sautéed, stirring continuously.

Add 1 tbsp of sherry vinegar (15 ml), 1/2 tsp of ground cumin (1.5 grams), 1 tsp of dried parsley (1 gram), and 1/2 tsp of dried thyme (0.5 grams). Season with sea salt and black pepper, and mix well.

Add the drained beans and 4 cups of vegetable broth (950 ml) to the pot along with 1 bay leaf. Turn the heat to high and mix gently.

Once it comes to a boil, place a lid on the pot, lower the heat to low medium, and simmer for 15 to 20 minutes.

In the meantime, make a garlic paste by adding 2 roughly chopped cloves of garlic, 2 tbsp of chopped fresh parsley (8 grams), and a pinch of sea salt into a mortar and pound until a paste forms.

After simmering, remove the lid and add the garlic paste to the soup. Mix gently to combine without breaking the beans.

Remove the stock pot from the heat and transfer some soup into a shallow bowl for serving.
