Roasted Vegetable Orzo Salad

1 cup orzo pasta
2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 cup feta cheese (optional)
1/4 cup fresh parsley, chopped
1 tbsp lemon juice

Preheat the oven to 400°F (200°C).

In a large bowl, toss the mixed vegetables with olive oil, salt, black pepper, and garlic powder until evenly coated.

Spread the vegetables on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.

While the vegetables are roasting, cook the orzo pasta according to package instructions until al dente. Drain and set aside.
