Season with 1 teaspoon of sea salt and freshly cracked black pepper.
Toss everything together until well combined.
Transfer the potatoes into a baking tray lined with parchment paper in a single layer.
Preheat the oven to 250 degrees Celsius (475 degrees Fahrenheit) using the bake and broil option.
Roast the potatoes in the oven for about 25 minutes.
Shred a generous cup of Manchego cheese and finely chop a handful of fresh chives.
After 25 minutes, take the potatoes out of the oven and transfer them into an ovenproof pan.
Evenly sprinkle the shredded Manchego cheese over the potatoes.
Sprinkle in 1/2 teaspoon of sweet smoked Spanish paprika over the cheese and potatoes.
Return the potatoes to the oven for a couple of minutes until the cheese is fully melted.
