1.5 pounds lean ground beef
1.5 tbsp chili powder
1 tbsp garlic powder
1 tsp paprika
1 tbsp onion powder
2 tsp cumin
1 tbsp adobo seasoning
1-2 teaspoons salt and pepper
1/2 cup onion, peeled and small diced
1 (4-ounce) can diced green chiles
1 (15.5 ounce) can refried beans, rinsed and drained
1/2 cup bell peppers, diced small
8-10 large flour tortillas
3 cups Mexican-blend shredded cheese
1/2 queso cheese, crumbled
1 batch red enchilada sauce, or 1 can store-bought enchilada sauce
(optional: 1/4 cup chopped fresh cilantro)

Heat oven to 350°F. Grease a 9 x 13-inch baking pan with cooking spray and set aside.

In a medium frying pan on medium heat, add 2 tbsp cooking oil and brown the ground beef until it is completely cooked through, breaking it up into small pieces as it cooks.

Add seasonings: chili powder, garlic powder, onion powder, adobo seasoning, and cumin, along with garlic, onions, and bell peppers. Cook for 1-2 minutes. Stir in the green chiles and refried beans, cooking for another 1-2 minutes. Remove from heat and mix in 1/4 cup of enchilada sauce until combined. Set aside.

To assemble the enchiladas, lay out a tortilla, spread one tablespoon of the ground beef mixture and cheese, then roll the tortilla closed and place seam-side down in the baking pan.

In the baking pan, add 1 cup of enchilada sauce, spreading it on the bottom. Place the rolled tortillas seam-side down in the pan. Once all tortillas are lined up, spread the remaining enchilada sauce on top and sprinkle shredded cheese on top.

Bake uncovered for 20-30 minutes. Remove from oven and serve immediately, garnished with chopped fresh cilantro and sour cream if desired.
